Welcome to The Folk,
a place where food feels like home and nature is always at the table.
We started The Folk with a simple belief: when we return to nature—through the way we cook, gather, and care for one another—we return to ourselves.
You may have first found us at the farmers market, where we served cups of ceremonial matcha. From there, we began hosting seasonal private dinners—small gatherings filled with meaningful connection, nourishing meals, and stories shared over candlelight. Every step of the way, we’ve let the food guide us, and it’s led us to something beautiful: community.
Now, we’re dreaming up a permanent space right here in West Palm Beach. A restaurant, a bakery, a café, and a market all wrapped in one, The Folk is designed to feel like an extension of your own kitchen—if your kitchen just happened to sit under a big oak tree, next to a garden full of herbs, and serve the best sourdough in town.
We use whole, seasonal ingredients, prepare food using ancient and modern techniques, and keep things free from seed oils and unnecessary additives. Every latte we pour, every dish we serve, is meant to nourish deeply—not just the body, but the spirit too.
We believe food is more than fuel. It’s ritual. It’s medicine. It’s memory.
And it’s even better when shared.

The Folk is a reflection of who we are—partners in life, in business, and in a shared dream to create something that feels like both sanctuary and celebration.
Our path to creating The Folk began long before the farmers markets and private dinners. It started with a deeper desire to feel well—in our bodies, our minds, and our everyday lives.
For Paul, that path began when he was working long days and feeling the effects of burnout. He started tuning into his body and realized he didn’t want to live on autopilot anymore. What he craved wasn’t just rest—it was resilience. He found it by getting his hands in the soil, connecting with nature, and growing the kind of food that feeds vitality from the ground up.
For Dallas, the journey began with a quiet but early understanding: food is fuel. But that didn’t mean flavor had to be sacrificed. She discovered that the most delicious meals were the simplest ones—freshly picked, thoughtfully prepared, and shared with intention. Over time, she became passionate about helping others reframe the way we think about food—not just what we’re eating, but why we’re eating it, and how we feel when we do.
Together, we began building a life that revolved around slowing down, creating with care, and reconnecting to the rhythms of nature. The Folk grew from that life—from our belief that nourishment isn’t just about nutrients, but about presence, joy, and curiosity.
We’re building this space not just for nourishment, but for belonging. A place to eat, to feel, to learn, and to return to the roots that ground us all.
